INGREDIENTS
VEGGIE PATTY

  • LENTIL: 1 can
  • SWEET ONION: 1, diced
  • CARROT: 1, large, grated
  • MUSHROOM: 6 oz, chopped
  • OAT FLOUR: 1/2 cup
  • SPELT FLOUR: 1/2 cup 
  • TAMARI/SOY SAUCE: 1 tbsp
  • BALSAMIC VINEGAR: 1/2 tbsp
  • CUMIN: 1/2 tbsp
  • PAPRIKA: 1 tsp
  • GARLIC POWDER: 1 tsp 
  • OREGANO: 1/2 tsp
  • PINCH OF SALT 

CREMA

The finishing touch on Spero's vegan cheesecake cream puffs: a powdered sugar dusting.

VEGGIE PATTY

  1. SAUTÉ the onions with some olive oil till soft, then add the balsamic vinegar and cook till onions are caramelized, add the carrots and mushrooms and sauté till everything is soft and well combined
  2. DRAIN and mash the lentils, leaving some texture, in a large bowl, mix the lentils, sautéed veggies, and the rest of the ingredients
  3. FORM the mixture into 3-4 patties with your hands, bake at 400°F for 35 minutes, flip halfway

CREMA

  1. WHISK cream cheese and lemon juice till smooth
  2. ADD the avocado and mash them up together
  3. DICE the onion and add to the mixture along with pomegranate seeds
