Beautifully caramelized top with a rich, gooey cheesecake with varying textures!



  1. PREHEAT the oven to 400 degrees f. lightly spray a 9-inch cake pan with baking spray. line with parchment paper, leaving enough to have a few inches of overhang. 
  2. COMBINE Spero Sunflower Cream Cheese, maple syrup, salt, cornstarch, vanilla, and plant-based milk in a bowl. stir together with a spatula until very smooth and creamy. 
  3. POUR batter into the prepared pan, tapping the pan against the counter to remove air bubbles. bake in the preheated oven until puffed, very well browned, and nearly burned on the edges, 50 to 55 minutes. increase oven temperature to 425 degrees f in the last 10 minutes.
  4. SET the cheesecake aside to cool in the pan to room temperature for at least 30 minutes.
  5. REMOVE from pan and parchment paper and refrigerate until chilled, 4 hours or overnight.
