Cheesy Omelette

omelette stuffed with veggies & creamy cheese

INGREDIENTS

  • EGGS: 3 eggs (or equivalent), we used vegan!
  • OLIVE OIL: 2 tbsp
  • SPINACH: 1 cup, sautéed
  • Spero Sunflower Cheese: 1 tub, we recommend The Herb or  The Original 
  • ONION: ½ onion, diced & sautéed - we used sweet!
  • SPICES: salt & pepper, to taste 

DO ITTT

  1. BEAT eggs or vegan egg substitute in a small bowl.
  2. HEAT a medium saucepan over medium heat. Add olive oil, then sauté onions until translucent. Add spinach & sauté until tender. Remove from saucepan.
  3. POUR eggs into saucepan & evenly coat pan. Once eggs begin to get firmer, add veggies & a thick layer of Spero Sunflower Cheese. Add salt and pepper as desired. Allow to cook until desired doneness.
  4. FOLD the omelette in the pan, surrounding the filling inside. 
  5. SPRINKLE with salt and pepper. 
  6. INDULGE in your new favorite cheesy omelette! :D
