Cream Cheese Stuffed French Toast - Pepita Egg

Spero Pepita Egg_Vegan_Omelet Recipe


  1. COMBINE Spero The Original  Cream Cheese and maple syrupIn in a small bowl. Mixing to create a smooth and creamy texture. Then set aside
  2. SLIGHTLY TOAST bread prior to preparing french toast mixture (we’re not looking for crispy, just dried out) 
  3. COMBINE Spero Pepita Eggalmond milk, cinnamon, and vanilla in a mixing bowl
  4. POUR Spero Pepita Egg mixture into a shallow bowl and place as many pieces of bread in one layer across the top, allowing the mixture to soak into the bread for 2-4 minutes (longer for thicker slices)
  5. COAT a nonstick pan with a thin layer of canola oil or cooking spray, turn to low heat
  6. PLACE individual slices of soaked bread onto the coated pan, allowing them to cook on each side for 5-7 minutes. If the slices are thicker, you will have to increase the bake time by several minutes.
  7. FLIP & COOK the other side for an additional 5-7 minutes, when the bottoms are golden brown, In a small microwave-safe bowl, add chocolate chips (we chose semi-sweet) 
  8. PLACE in microwave for 15-20 seconds, taking out to stir. You will have to repeat this process until the chocolate is completely melted, but do not over-microwave the mixture or it will burn. Once it has melted, remove it and set aside
  9. SPREAD cheese mixture on one side of a fresh piece of french toast, then sandwiching the mixture between another piece 
  10. DRIZZLED chocolate and remaining maple syrup 
  11. ENJOY your indulgent breakfast!
