Mint Brownies

INGREDIENTS

  • ORGANIC POWDERED SUGAR: 3½ cups 
  • Spero Sunflower Cream Cheese: 1 tub The Original + ½ cup of cocoa powder
  • PLANT-BASED BUTTER: 1 cup 
  • PEPPERMINT EXTRACT: 1 tsp 
  • CANDY CANES: 8, crushed into small pieces

DO ITTT

  1. LINE an 8x8 baking dish with parchment paper. 
  2. HEAT the butter, powdered sugar, & Spero Sunflower Cream Cheese in a large sauce pot over medium heat until the butter melts. *Don't let the mixture boil or burn! 
  3. STIR constantly until smooth, then remove from heat & stir in the peppermint extract & crushed candy canes, leaving some to the side to garnish on top at the end. 
  4. TRANSFER immediately to the prepared dish & chill in the refrigerator for at least an hour or overnight until set & ready to serve. 
  5. TOP with more crushed candy canes before serving.
