Saag Paneer

saag paneer


flavorful, aromatic saag paneer with crispy tofu.

serves 2-3.

INGREDIENTS

  • Spero Sunflower Cream Cheese: 3 tbsp, The Original :D 
  • OIL: 1 tbsp, we love avocado or EVOO
  • CUMIN SEEDS: 1 tsp
  • GINGER: 1 tbsp, minced
  • GARLIC: 1 tbsp, minced
  • ONIONS: 1 cup, finely chopped
  • SPINACH: 1 pound
  • KALE/MUSTARD LEAVES: ½ pounds
  • TOFU: 1 packet
  • 1 SERRANO/GREEN CHILI: finely chopped (remove seeds if you prefer less spicy!)
  • TURMERIC POWDER: ½ tsp 
  • CORIANDER POWDER: 2 tsp 
  • CUMIN SEEDS: 1 tsp 
  • GARAM MASALA: 1 tsp 
  • KASURI METHI: 1 tsp 
  • WATER: 2 tbsp (& as needed to dilute the cheese!)
  • SALT: to taste
  • LEMON JUICE: to taste

DO ITTT

  1. HEAT a large pot filled with water & let come to a boil.
  2. ADD greens & blanch for 2 min. Immediately remove greens & submerge in ice cold water. 
  3. PUREE spinach in a blender & set aside. 
  4. HEAT a deep pan & add oil. 
  5. ADD cumin seeds & let them sizzle. 
  6. ADD ginger, garlic, onions, & green chili & sauté until onions become golden.
  7. ADD turmeric powder, coriander powder, & kasuri methi & saute for 1 min. 
  8. MIX Spero Sunflower Cream Cheese w/ water & add it to the pan along with the spinach puree.
  9. MIX everything well & add garam masala.
  10. COOK for 2 minutes & salt to taste. *blend to make it extra creamy!
  11. FRY tofu in a skillet with little oil until they become golden. 
  12. ADD tofu to the gravy & switch off the heat. 
  13. SERVE hot, garnished w/ chopped cilantro & lemon juice. 
  14. INDULGE in your new fave oh-so-satisfying saag paneer!
