Saag Paneer
saag paneer
flavorful, aromatic saag paneer with crispy tofu.
serves 2-3.
INGREDIENTS
- Spero Sunflower Cream Cheese: 3 tbsp, The Original :D
- OIL: 1 tbsp, we love avocado or EVOO
- CUMIN SEEDS: 1 tsp
- GINGER: 1 tbsp, minced
- GARLIC: 1 tbsp, minced
- ONIONS: 1 cup, finely chopped
- SPINACH: 1 pound
- KALE/MUSTARD LEAVES: ½ pounds
- TOFU: 1 packet
- 1 SERRANO/GREEN CHILI: finely chopped (remove seeds if you prefer less spicy!)
- TURMERIC POWDER: ½ tsp
- CORIANDER POWDER: 2 tsp
- CUMIN SEEDS: 1 tsp
- GARAM MASALA: 1 tsp
- KASURI METHI: 1 tsp
- WATER: 2 tbsp (& as needed to dilute the cheese!)
- SALT: to taste
- LEMON JUICE: to taste
DO ITTT
- HEAT a large pot filled with water & let come to a boil.
- ADD greens & blanch for 2 min. Immediately remove greens & submerge in ice cold water.
- PUREE spinach in a blender & set aside.
- HEAT a deep pan & add oil.
- ADD cumin seeds & let them sizzle.
- ADD ginger, garlic, onions, & green chili & sauté until onions become golden.
- ADD turmeric powder, coriander powder, & kasuri methi & saute for 1 min.
- MIX Spero Sunflower Cream Cheese w/ water & add it to the pan along with the spinach puree.
- MIX everything well & add garam masala.
- COOK for 2 minutes & salt to taste. *blend to make it extra creamy!
- FRY tofu in a skillet with little oil until they become golden.
- ADD tofu to the gravy & switch off the heat.
- SERVE hot, garnished w/ chopped cilantro & lemon juice.
- INDULGE in your new fave oh-so-satisfying saag paneer!
